I found some pie pumpkins at the grocery store the other day and have been waiting for the weekend, when power rates are lower, to cook them up and freeze them for holiday treats. I have the second batch in cooking now, the first batch is ready to be bagged and frozen, and there is a third batch, waiting for the pan. I can’t wait, holiday treats always taste better with fresh pumpkin as opposed to canned. I can always taste the can.
